Description / Method:
- To peel the tomatoes more easily boil a large pan of water and put the tomatoes in the water until the peel loosens. This should only take a minute or so. Then pour off the water, peel all the tomatoes and blend them either in a blender of cut up very small with a knife.
- Chop the onions, peppers into small cube and put into a pot with the tomatoes and lime juice. Add the chilli, basil, salt and pepper and bring to the boil. Cook until the bell peppers become soft.
- Pour the mixture into clean glass jars with screw tops. When cool keep in the refrigerator.
